Bourbon Kentucky Derby Pie

Ingredients:

  • 4 Eggs

  • ¾ cup Corn Syrup (I use Light)

  • ¾ cup Brown Sugar (I use either Light or Dark)

  • ⅓ cup AP Flour

  • 2 tbsp Whit Marie’s Bourbon Extract or regular Bourbon (optional)

  • 1 tsp Whit Marie’s Vanilla Extract

  • ½ cup melted Butter

  • ¾ cup Chocolate Chips (I use a mix of Semi-Sweet and Milk)

  • 1 ½ cups chopped Pecans

  • 9” Prepared Pie Crust (I buy frozen from the store, but if you have mastered a good crust, please make it yourself and share the recipe please)


Directions:

  1.  Preheat oven to 325 F

  2. Whisk eggs, then add brown sugar, corn syrup and flour until smooth.

  3. Stir in vanilla, butter and Bourbon (Vanilla Bourbon Extract).

  4. Add Chocolate Chips and Pecans and stir until fully incorporated.

  5. Pour into pie crust and bake in the center of the oven for 60 Minutes.

  6. Remove when fully cooked and there is a slight giggle. 

  7. Let cool completely and serve


Notes:

  • I like to serve with vanilla ice cream or whipped cream

  • The Bourbon is optional, but please make sure to add vanilla extract.
