Spiced Pumpkin Bread Recipe with a Pecan Streusel Mix-in



Pumpkin Bread Ingredients:

Wet Ingredients:

  • 1 cup canned pumpkin puree (NOT Canned Pumpkin Pie)

  • 1/2 cup vegetable oil

  • 1/2 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon WhitMarie’s bourbon vanilla extract or WhitMarie’s vanilla extract

  • 1 teaspoon cinnamon extract


Dry Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 tsp pumpkin spice powder or use 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, 1/4 teaspoon ground ginger


Pecan Streusel Mix-in (optional)

  • ½ cup chopped pecans

  • ¼ cup white sugar

  • ¼ cup melted butter

  • ¼ tsp pumpkin pie spice 

  • ¼ tsp cinnamon powder

  • ¼ tsp vanilla extract (you can use either Bourbon Vanilla or original Vanilla)


I like to either add to the top or mix into the bread before baking.I also sprinkle a little white or brown sugar to the top before baking for an extra sweet crunch.


Instructions:


  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

  2. Mix wet ingredients in a large bowl, whisk together the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, vanilla extract, and cinnamon extract until smooth.

  3. Combine dry ingredients in a separate bowl, whisk together the flour, baking soda, baking powder, salt, and spices (cinnamon, nutmeg, cloves, and ginger).

  4. Fold the dry ingredients into the wet ingredients gradually, stirring until just combined. Be careful not to overmix. 

  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. 

  6. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

  7. Slice and enjoy your spiced pumpkin bread! It’s great on its own or with a little salted butter.
